Carrot Cake Keto Balls

  A guilt free dessert. 



INGREDIENTS

(8-oz.) block cream cheese, softened
3/4 c. coconut flour
1 tsp. stevia
1/2 tsp. pure vanilla extract
1 tsp. cinnamon
1/4 tsp. ground nutmeg
1 c. grated carrots
1/2 c. chopped pecans
1 c. shredded unsweetened coconut
DIRECTIONS
  1. In a large bowl, using a hand mixer, beat together cream cheese, coconut flour, stevia, vanilla, cinnamon, and nutmeg. Fold in carrots and pecans. 
  2. Roll into 16 balls then roll in shredded coconut and serve.
